Birthday Cake!

Hey guys! We love birthdays around here… and tomorrow is mine! My other love is baking cakes. People think I’m crazy for baking my own birthday cake, but I enjoy it! I have this dream of opening a cakery called Heather’s Rustic Cakes where the taste of a cake is more important than the looks. Not that a fancily decorated cake is a bad thing, but that’s not my strength. Best to stick to the things I’m good at, eh?

This year I decided to try a new-to-me recipe from Deb Perelman of Smitten Kitchen. A friend of mine gifted me her cook book a few years ago and there are some seriously yummy recipes in it. I’ve been meaning to try her Red Wine Velvet Cake with Whipped Mascarpone for a while, but since not all the red wine bakes out it is not kid friendly. With this year being a little different we will only be celebrating with my in-laws. So it is the perfect time to try out a grown up cake… especially since my daughter doesn’t like chocolate cake.

Because the original recipe serves up to 20 people I decided to half the recipe and use two 6-inch pans. I torted the cakes to make a four layer cake.
