Bone Broth and Chicken Noodle Soup

Guys! The weather finally turned, and I am thoroughly enjoying the cooler days and even the rain! Fall is my favorite! I finally get to be back in the kitchen making warm, cozy meals (In the summer it’s too hot to cook inside!).

Today I want to introduce you to two of my favorite recipes. One is for bone broth and the other is for chicken noodle soup. I happened to find these recipes on Pinterest, and they have become staples in my house during the cooler months. In actuality, I am a year-round soup kind of person, but there are other people in my house that I have to please that don’t share my affinity for soup (or elf culture… wink!)

Both of these recipes are easy! And flavorful… especially when used together.

Anytime I roast a chicken I make sure to throw it in the Instant Pot with all sorts of veggies and herbs. It only takes a few hours in the IP to make some of the best broth you will ever taste! I use the Instant Pot Chicken Bone Broth recipe from Instant Pot Eats… It is seriously the best. When it’s done I strain it and put it in left over soup containers from Chinese take out, or I use mason jars… If you can find any these days. Or you could freeze it in ice cube trays for later.

Then I use my delicious bone broth to make Flu Fighter Chicken Noodle Soup from Baker by Nature. Don’t even bother searching for Flu Fighter anything on Pinterest. Ever since the pandemic started they took it upon themselves to sensor any pin that mentions the flu… It won’t even bring it up in my own Pins! Ridiculous! Let me say the best part of this recipe is the roasted chicken! If you have left over chicken from your whole chicken that you used to make the bone broth, by all means, use that! But cut back a bit on the seasoning… I used the whole batch of seasoning last time, and it was a bit too spicy for my kids. But if you don’t have left over chicken, all you have to do is roast some up… it’s so much more flavorful than boiled chicken! Oh, and don’t skip the lemon at the end. It really brightens things up.

If you don’t have an Instant Pot yet now is the time to put it on your Christmas list! I love mine! I mostly use it for rice and bone broth, but there are some other great recipes out there! (It also works really well for ribs! Who would have thought?!)
