A peanut butter cookie to share… or not.

After making the Levain Bakery copy cat cookies (chocolate chip and double chocolate) I found that there was no peanut butter cookie version. What a travesty! Peanut butter cookies are one of my faves, and I really wanted a giant, soft, and slightly gooey version. So I decided to make it happen on my own!

Like the other kinds of cookies I replaced some of the all purpose flour with cake flour and added corn starch. This recipe makes 6 giant cookies. You could totally double it if you need more, but with them being so big one cookie actually equals about 4 cookies. If you’re like me, it’s not good to have a ton of sweets in the house (your welcome Isla’s teachers! #sorrynotsorry). This makes the perfect amount for them to be gone in a day or two.

Giant Peanut Butter Cookies

I hope you enjoy this recipe as much as I do! It’s practically like eating peanut butter cookie dough with a crunchy outside. Yum!
