Protein Pancakes

When you love to bake and eat sweet things it can be challenging to balance that with your desire to eat healthy and be fit and strong. If you’re like me, you may be an emotional eater and also have a minor case of SAD (Seasonal Affective Disorder). Winter is so much more challenging for me when it is dark and gloomy all the time. I find myself comfort eating which I think is going to make me feel better but really doesn’t help and makes me gain weight.

All of this to say that protein pancakes are a healthy alternative to get a dose of something sweet which is actually healthy. And as a bonus these are gluten free! The recipe is so simple and it’s fun to add some healthy toppings.

Protein Pancakes

Don’t forget that cooking these low and slow is the way to get the perfect pancake texture. I hope you enjoy these as much as I do. They are more filling than regular pancakes and so will last longer.
