Pumpkin seeds 3 ways

This year we carved pumpkins the day after Halloween… which I say is more of a seed expedition than anything else. The seeds are my husband’s favorite part, although this year he also thoroughly enjoyed gutting and carving with Isla.

Toasting the seeds is super easy!

First and most importantly you need to clean the seeds. REALLY clean them! You don’t want any pumpkin gunk on there later. I find the easiest way is to use a colander and run the water over them. Use your hand to rub them together and get any stray fibers off.

The next step is to let them dry. Spread them out on a clean tea towel. Don’t use paper towels… they stick, and I don’t think you want to be eating paper later. Been there, done that. It wasn’t the brilliant idea I thought it was going to be.

Preheat your oven to 350 degrees and put some parchment paper in your sheet pan. Parchment paper is my favorite thing! It changed my life when I started using it. Seriously, save yourself the hassle of scrubbing your pans. Use parchment paper! You can get a double giant roll at Sam’s Club for a great price.

Once they are nice and dry peel them off the towel and put them in a bowl. Drizzle a little olive oil on them, and stir it around. It doesn’t take much. You just want a light coating. Sprinkle with your choice of salt. I had kosher salt on hand, so that’s what I used, but if I had my favorite pink Himalayan salt I would have used that.

Plain salted is delicious, but if you want to try something else you can sprinkle some cinnamon sugar on them or some Cajun seasoning. We love McCormick’s Louisiana Cajun seasoning! Stir them up and put them on your sheet pan in a single layer. Stick them in the oven and start your timer for 10 minutes. When your timer goes off stir them up, spread them out in a single layer again and put them back in the oven. Put another 10 minutes on the timer. After the second 10 minutes you will be nearing roster completion. It’s up to you how crunchy you want them. I like to go another 5 minutes to get the extra crunch. But be careful! You don’t want them to burn!

Take them out and enjoy them warm or munch on them throughout the day. So good!
