Banana Bread

It snowed last night, and there is more snow and rain in the forecast this week. What is more cozy and perfect for stormy weather than warm banana bread?

Here is my beloved recipe for banana bread from The Joy of Cooking. It is so simple and only uses a few dishes. And it’s the perfect way to use up those old brown bananas that seem to be left at the end of the week.

For this recipe you will need:

Ingredients
1/3 cup unsalted butter
2/3 cup sugar
1 1/3 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
2 large eggs, lightly beaten
1 cup very ripe bananas, mashed (about 2 bananas)

Instructions
1. Preheat the oven to 350 degrees F and grease a loaf pan.
2. In the bowl of your mixer, beat the butter and sugar on high speed for 2-3 minutes.

3. In a separate bowl, combine flour, salt, baking soda, and baking powder.

4. Beat the flour mixture into the butter mixture until the consistency of brown sugar.
5. Gradually beat in the eggs.

6. Fold in the bananas.

7. Spread the batter into the greased loaf pan. And bake for 50-60 minutes or until a toothpick comes out clean.

8. Let cool for 10 minutes before unmolding.
9. Enjoy plain or with butter or cream cheese! Yum!
